Most are MPEG 2 and being transitioned to MPEG 4 - I don't think anyone has a list of which is which.

I'm not sure what you mean by "type of signal" but I'll try this answer. All FiOS channels are carried on digital QAM channels, most of which (including premium channels ) are encrypted.
