I'm trying to change the 5ghz settings (channel specifically) and when I log in through the browser I get essentially a "for dummies" layout with no access to advanced settings. How do I gain access ?

Hello,They did make it a little tricky to find.
Click Wireless Settings on the top navbar.
Click Basic Security Settings from the side navbar.
Find the 5 GHz Channel dropdown. Select your desired channel and save.
See below screenshot for example:
