1. do you know if the Verizon E3200 Verizon Extender works as a mesh if wired with coax cable back to main router (G3100)? or is it merely an extender? or is it an access point?

It is an access point. If you enable SON, it will enable 802.11r/k/v access point steering and band steering, which are advertised features of a mesh system.
