Greetings all, I've had Fios since 2005 so I have the original ONT and the old Fios-G1100 router. Would it be possible to upgrade the router but keep my current plan and ONT?

Yes. Your Internet Plan, ONT, and router are three separate entities and could be mixed and matched technically.
Obviously it is not wise to subscribe to a higher speed plan then use an ONT or a router to bottleneck this speed. Given this is not the case, you could order a G3100 from the VZ website. I am not sure you could buy a CR1000A or B right now because it is not in the online shop.
