Switching phone numbers

So it’s a bit of a complicated situation but here’s the rundown:

A new iPhone 15 Pro Max is arriving today linked under my phone number. Once it arrives, I’d like to remove my phone number from it and put the 15 under my Mom’s phone number and transfer all her data from her iPhone 14 Pro. Then I’d like to move my phone number and all my data from my current iPhone 12 into her old iPhone 14 once it’s been wiped.

How can I do this?
