Hello! I am currently on Fios home internet 500 mps, but I want to switch down to the 300 plan. Do I need to get a new router for this or will it switch over automatically?

Router doesn't know anything about the speed. It is all handled in the Fios Network between the ONT at your house and the rest of the network.
