my child is texting using handcent application or any app for that matter, are all the texts exchanged still going to show up on my verizon account or is this some way she's getting out of us knowing who she's talking to or texting?

I am pretty sure the messages should appear still on the Verizon account.
hancent is a third party application that just skins over the native text protocol for the droid. the messages sent and received will still show on your Verizon account the same as if they had been sent using the native text messaging system.
The actual content of the messages won't show up due to privacy invasion.
