Then you definitely need to navigate to Settings –> Wireless & Networks –> Data Usage. and see which apps are using your data, I wouldn't be surprised if Verizon Cloud for instance was busily backing up everything on your phone for you. Also make sure Play Store is set for wifi updates only, when you first get a phone there are a ton of system updates and application updates that all happen as well. You probably also want to Restrict background data usage in your case as well. Take a look at the article is has plenty of info on ways to reduce this type of behavior.
There are many things that can be using data, background sync of various apps, application updates, backup of photos to the cloud, backup of data to the cloud, etc. many of these apps can be set to use only wifi for such activities. What I would do first though is login to My Verizon, goto My Account -> View Usage, click on Data, select the appropriate phone number under Current Data Log for Line and see when data was used and how much, there is a very detailed log of data by date/time. You'll have to click on MB or KB instead of GB to get an easier to see number (less decimals) but should at least narrow down when data was used. There are many ways to limit data usage but the first and easiest if available is to make sure you connect to wifi whenever you can. But , I did go into my verizon and see detailed data usage and that is how I found out I was using all that data when I was even on the phone,and sleeping too during the time data is being used !!!!!!! Recently came back on Verizon contract cell service after years on various prepaid services. The S5 is my first unrooted smart phone and I am pretty paranoid about data usage as no longer able to use Droidwall and Titanium Backup.
Phone default settings are Data Off, Playstore set to wifi update only and background data off for many apps. I have "My Verizon My Data app" and "Active Apps" app on home screen for monitoring purposes. Something seems to infrequently activate the You-Tube and Chrome apps randomly. Cloud is turned off as I back up to Google and my computer. I have a number of other apps turned off as well and monitor "Data Usage" for unwanted app data consumption. Also have data usage warning and shut off levels set in the phone. My plan is 1 GB and I am regularly using under .5 GB.
