Prompt keeps popping up telling me to install a system update. Should I let it? Or does it 'break' stuff? I'm used to computer software where a bad 'patch' that adds features can also break other features and/or slow down the program.

there are no reported problems that the update has broken the Droid, only reports of people not updating correctly, but even that can be fixed.
Go ahead and upgrade, but the new photo gallery is worse than the old one. Motorola issued a public statement today saying that the new gallery was a downgrade.
