Definitely remove the SIM card - that connects you to the network, and you can use it in a new phone if the size is the same. They are free at a corporate store, and should not be in the returned phone.
The battery can be left in - in fact, it may not be user removable.
Batteries are not user accessible on iPhone's...at least they're not suppose to be. So yes, you can disregard the removing of the battery...
