Going from an iphone 6s to a samsung s6 edge plus, is it as simple as swapping out the sim card to activate the edge s6?

If it will fit, it should certainly work.
I don't know about the specific models you mention, but I switch the SIM card between an iPhone 6 and a Samsung Galaxy S6 all the time without any problems whatsoever.
I'm not sure what the VZW rep is talking about, the specs for the 2 phones state they both use a nano-SIM.
