OK, pros ... I am new to the iPhone, but LOVED the Droid's ability to talk your text and email messages, and I cannot find ANY way to do this on the iPhone...
Anybody solve this, or am I just plain missing something blatantly obvious?

I think you have to have an app for that. The iphone doesn't do it if you don't have an app. I don't know what app you should get though.

I agree, I was really surprised me that the iphone can't do that. It does do a lot of things extremely well, but not that.

There are a few in the app store. I just typed in speech to text and there are several. Most cost about $2, but there are some options in there.
Apple has a built in text-to-speech program with many features. Located in SETTINGS>GENERAL>ACCESSIBILITY. You can activate VoiceOver from here; however, the navigation can prove to be a bit sticky (this application is designed for the seeing-impaired user).
Personally, I like to enable VoiceOver by setting the "Triple-click Home" to default to VoiceOver found in ACCESSIBILITY. Plain English, when you are in (or out) of any App, this will activate VoiceOver. This is very handy App for reading email, .pdf's, or eBooks.
There are many finger gestures available for this powerful built-in App, so you may want to search YouTube or www.apple.com for VoiceOver tutorials.
The only drawback to VoiceOver is there is one 'voice', but it works.
