5G Internet Gateway Randomly drops local devices

Just setup the Verizon 5G Internet Gateway with Extender for about 2-3 weeks now. For the most part its been good. The Gateway holds a consistent 1-2 bars on the WAN side for 5G Connectivity. The Issues I've been running into are on the WLAN side. I don't have any physical connections on the LAN at this time. What I have seen is intermittent drops of the WLAN connection on my windows laptop and pretty much all of the apple devices (iphones and ipads). Other devices like a Samsung smart TV, amazon TV's, and Google home peripherals don't drop the connection. My laptop will see the SSID but now wont connect after its been connected for the past 3 weeks? I have connected it to my phones hotspot with no issues. The apple devices will connect and then immediately drop and then reconnect, then drop, etc. I've resorted to just using the 5G service on the my phone however the ipads are Wi-Fi only.
Anyone else run into an issue like this?

What models of gateway (i.e., router) and Wi-Fi extender are you using?
My first suggestion would be to temporarily remove the Wi-Fi extender to determine if it's the problem.
