My home phone was an unlisted number for years. Now since getting FIOS digital I no longer see unlisted on my bill. Does this mean my number is no longer unlisted? No one came to make changes to wiring so do I still have the Copper ?

If you switched from copper POTS (plain old telephone service) to FiOS, equipment must be installed at your home.
FiOS Digital Voice and FiOS phone are two different services delivered over the same equipment. Switching from one FiOS service to another does not require any equipment or wiring changes.
I'm guessing that you had FiOS phone installed a while ago and just now switched to Digital Voice. Digital Voice has many neat features that POTS doesn't have, such as voice mail delivered by email, simultaneous ring, and call blocking by number.
As far as unlisted service goes, your best bet is to contact Verizon directly and ask them.
Good Luck.
