I have my Fios extender connected to my Verizon Router via a CAT 5 cable and it is also connected to the system via a coax cable.
The Lan Lights and COAX lights blink at first but then they go off and it is clear that the extender is not connected.
It also did not stay connected via the wireless set up method using your instructions. Has Verizon addressed this issue which seems to occur with others

Having multiple uplinks to the extender from the main router will cause the Spanning Tree Protocol to disable all but one links.
Notwithstanding, relying on the port LEDs as a sole determinant of extender uplink connectivity is unreliable as the port LEDs do turn off automatically after a period of no link connectivity change. This behavior of automatically turning off the LEDs could be adjusted in the GUI with the light level set to 100%.

There was a time when you could have a dual connection to an extender.
I myself did that throughout the house and there were never any problems.
The Ethernet connection was treated as the first choice while the coaxial cable connection was the second/on standby. I could remove the coaxial cable and the extender never skipped a beat as long as the Ethernet cable was active.
The only time the coaxial cable was active was when the Ethernet connection went down.
Unfortunately, an update took away the ability to use a dual connection. After the update, connecting both coaxial and Ethernet would cause the extender to not come up.
