Is your network set up to use WPA3 Security? 6Ghz Wi-Fi requires WPA3 in order to work. The Verizon routers usually ship with WPA2 mode enabled by default, since this is what most devices support, and WPA3 is relatively new and not widely supported yet.
When WPA3 is enabled, you should be able to go in and enable the 6Ghz radio. The WPA2/WPA3 settings will be found in the Wi-Fi Security Section of the router.
EDIT: I do not know if WPA2/WPA3 transition mode on the FiOS routers will allow 6Ghz to activate. If you see that option and want to try it, go for it.
