I cannot find a way to copy and/or paste on my new Edge! None of the old tactics (long press, etc) work, and the share options do not say anything about copy or paste. Is there something I need to activate?

Thanks so much, but the problem is that I do not get the cut/paste option
no matter what I do. I can long press til my fingers freeze, but nothing
happens! The only exception is in the text of an email. There I do get the
copy/paste option, but not in any other program.

I see that you are not the only one having this problem. Apparently one of the last updates even as far back as on some note 4&5 are having this problem.I did read one comment that says something about

I don;t know if that will help but if you do let me
Just saw where if you clear the cache and data you should make a backup first as it will clear the messages.

Thanks. I cleared data and cache, but to no effect. Well, maybe a little
bit since once in awhile I can copy data/text, but even thats spasmodic.

Have you tried a clipboard app from the Play Store like:
