My Galaxy S8 will no longer support my chase and wells Fargo apps as the OS is too old and not compatible according to the banks. How can I update the OS if one is not available when I go to system updates under settings.??

Newer Galaxy phones than yours have been obsoleted, so yours cannot be updated any longer as Samsung is no longer supporting the S8. If the phone is otherwise doing what you need it to do, you could theoretically use it until the hardware dies, but considering how you have apps which will no longer run due to the phone being outdated, it's time for a new phone.
This device is no longer being supported by Samsung and will not receive any new updates. ~Peter
