We have 2 phones on “Unlimited Plus” with 30 Gb/month of mobile hotspot data each.
Our Xfinity internet and tv is down due to a windstorm and we’ve been using the hotspots to watch tv.
How do we track the mount of data we’ve used specifically streaming via the mobile hotspots?

Use a search engine to look up "check hotspot usage on phone". It might also be under your data usage in your My Verizon account. Be warned, streaming is a data hog, so hopefully your ISP gets their service back up and running soon.

why all the sudden has hotspot data accelerated? My hotspot just reset and in two days watching five hours of TV shows 14 GB used I’ve not changed any of my schedules or usage, and it has almost quadrupled from what it was. The last several years

I'd check with your streaming service provider and see if the settings for video quality were changed somewhere, because streaming in higher quality mode uses more data.
