I’ve had an Apple Watch showing up in data usage for a few months. I do NOT own one. It’s just one of a few issues I am facing along with my data being used all over the place

Staying on top of your account is always important, and it is definitely concerning that you are seeing a device that is not yours. To clarify, is this on your My Verizon usage? When did this start?

Do you have a network extender or signal booster? If so, I'd try lowering the range on it so your neighbor(s) aren't getting free service. If you don't have some kind of device which someone else is able to tap into and you don't recognize that smartwatch or other things using your account, then someone may have started up new service(s) in your name under your account, in which case you need to file a fraud claim:
